3 Healthy Breakfast Ideas with Bacon

Having bacon for breakfast is not something many people think is a good idea. Even though it contains a lot of fat and calories, those fats are considered beneficial for our body and mind. Eating bacon at the beginning of your day will help you with attention and memory while providing your body with the necessary energy to endure all kinds of tasks throughout the day. Here are a few healthy recipes that contain bacon.

1. Bacon Egg Muffin

You will need:
-6 strips of bacon
-1 cup of flour
-1 tbsp. of salt
-1 cup of milk
-3 eggs

To make this protein breakfast put your bacon strips on a baking tray and let them bake for ten minutes on 200 degrees. In the meantime, mix one cup of flour, some salt, eggs and milk into a bowl. After that, grease oil muffin molds using olive oil or bacon grease. Put one scoop of your batter into each mold and bake it for ten minutes on 200 degrees. Once the batter rises and cooks take it out of the oven, put bacon strips around each muffin, crack a raw egg on top of it and bake it for ten more minutes. When those eggs cook, put your muffins on a plate and serve them with a fresh vegetable salad and some sour cream.

2. Squash Bacon Bowl

You will need:
-1 spaghetti squash
-half a cup of pancetta
-1 egg
-2 egg yolks
-salt and pepper
-2 tbsp. of olive oil
-half a cup of parmesan cheese
-1 tbsp. of dried oregano

This breakfast takes a little bit longer to make but if you have a toaster oven it won’t be a problem. Start by cutting a squash into two halves. Put some salt and pepper on top of it and put it into the oven for 45 minutes to bake. If you are using a toaster oven then you will need only 20 minutes on high temperature. Once your squash is soft and done, take out its meat. Put two tablespoons of olive oil into a pan, add pancetta, squash meat, eggs and cheese and cook it until it is done. Fill your squash with this filling, put some dried oregano on top and a little bit of cheese and your breakfast is ready.

3. Collard Greens Wraps

You will need:
-4 slices of bacon
-half a cup of yellow onion
-half a cup of red pepper
-salt and pepper
-3 eggs
-2 leaves of collard greens
-half an avocado
-half a tomato
-1 tbsp. of hot sauce

Start by chopping the bacon into smaller dices. Cook it until it is completely crisp and brown. In another pan cook onion and pepper, add eggs and seasoning, and then bacon, once the vegetable is done. Use greens as wraps by putting the filling, slices of avocado and tomatoes on top of it and drizzles of hot sauce to finish everything off. Wrap them and enjoy it.
